Too Good To Be VEGAN Chocolate Chip Cookies

OH MY GOD! These vegan cookies are to die for. They are the perfect combination- crunchy on the outside but gooey on the inside!
Again I found this recipe on one of the BBC Food websites:

Altogether (cooking and baking) it took about 1 hour to an 1 hour and 30 minutes but it depends on oven space and the number of trays you use. The recipe says it makes 20 but we managed to get about 18 decent sized cookies out of the mixture.
Next time I want to make one big ass cookie like they do at Millie’s Cookies- all that spooning with the dough gets frustrating by tray three especially when I want to eat them! (ง'̀-'́)ง
Anyway- with all cookie vengeance and anger aside lets get straight to it because they are FIT
Ingredients-
200g dairy-free margarine (I used Vitalite)
125g soft light brown sugar
100g caster sugar
1 tsp vanilla extract
250g plain flour
½ tsp baking powder
½ tsp bicarbonate of soda
pinch of salt
200g vegan dark chocolate chips
1 tbsp soya milk
1. Add in the butter, both sugars, vanilla extract, flour (sifted), baking powder, bicarbonate of soda and a pinch of salt

2. Mix together thoroughly

3. Add in the choccy chips, and soya milk

4. Mix together (the milk will help to loosen the mixture and make it more cookie dough like)

5. Using an ice cream scoop or two dessert spoons make lil plops of dough on a lined baking tray making sure you leave space between each one as they spread in the oven

6. Put them in the oven 180C/160C Fan/Gas 4 for 10 mins/until golden brown

7. Once baked leave them on the tray to cool slightly and solidify and then transfer them onto a cooling rack

Mother broke a utensil when wafting it in front of my face- she was getting impatient as the cookies were still in the oven ( ͡ᵔ ͜ʖ ͡ᵔ )

My family LOVED these cookies and yet again, they disappeared way too fast.
