Seriously Good VEGAN Scones With Jam and Whipped Cream

Okay, so since I have painfully become dairy free, I have missed scoffing the scones. Since I have been on some sort of lockdown baking frenzy it was only fair that the beauty that is the scone had its time to shine.
This recipe is a little bit trickier than the others but is 100% worth the effort and the clean up afterwards.

All in all it took be between 60-80 minutes to prep and bake so not bad!
For this recipe you have to be prepared to get your hands dirty so wash your hands you dirty pig!
Lets Go!
Ingredients-
3 cups (375g) Self Raising Flour (plus more for dusting)
1/2 tsp Salt
1 tsp Baking Powder
1/2 cup (112g) Vegan Butter/Margarine (I used Vitalite)
4 Tbsp (56g) Caster Sugar (also called Super Fine Sugar)
3/4 cup (180ml) Soya Milk (plus more for brushing the tops)
1 tsp Vanilla Extract
2 Tbsp Lemon Juice (freshly squeezed)
For Serving-
Strawberry Jam
Whipped Dairy Free Cream (I used Elmlea’s plant based cream)
1. Add flour, salt, baking powder and vegan butter into a bowl. Rub together with fingers until the mix is crumbly
2. Add the sugar, soya milk, vanilla extract and lemon juice and mix with spoon (I forgot to take a picture with all of the ingredients so here is some sugar on top of the crumbly mixture) ¯\_(ツ)_/¯
3. Flour your surface and your hands (adding extra flour if your dough is still sticky) and plop out your mix
4. Work your dough into a ball, flatten out and cut four scones
5. Roll your dough back into a ball and repeat, placing all cut out scones on a baking tray lines with parchment paper
6. Brush the tops with soya milk and put them in the oven for 15-20 minutes (or until golden brown) at 220C/200 Fan
7. Leave to cool on a cooling tray
8. Serve with jam and whipped cream \ (•◡•) /
These scones tasted AMAZING. I will definitely make them again and, as per usual, the family enjoyed them as much as I did- bit of a bonus.
